If it's downhill then I lock the boots down and close the top buckle (I leave it open for riding and touring). I can awkwardly link turns on intermediate runs at my local ski area when I'm split skiing and I find the rocker profile is my limiting factor.
I don't really skate ski very much and I kind of suck at it so I can't really offer much good advice there.

ski mode puts you in proper form for skiing, over the knees leaning forwardish... every time I fall when skiing its backwards or tele OTB. Skate skiing in softies can be done but it takes just the right snow texture and some skill.
I should mention that I've learned through experience that I can comfortably ski short pitches with my skins on and even link pow turns that way but for the love of God, never try skiing with crampons on!
