My old roommate was making granola bars similar to Cliffs with Dates and Oats a couple years ago.
That is really easy to do, I make some before a trip sometimes.
There are lots of recipes on the internet that taste good and have the same ingredients as Cliff Bars, but the tricky part is finding a way to make them more or less solid. They tend to fall apart if you follow those recipes, or be super solid and impossible to eat. It's hard to get the texture right.
So I ommitted the rice crispies in those recipes, and dumped the whole thing on unsalted rice crackers. The one in the picture is pistachio, dried banana and goji berries, raisins, hazelnut and oats. I usually put half of each in a blender and cut it up really fine and mix that with some oil into a paste. Then cut op the other half of the ingredients course. Then mix everything with some heated brown rice syrup or similar and press it onto the rice crackers.

ieism, like the ingenuity, but why not just leave the ingredients as is and eat it as trail mix? Trail mix and fruit are what I usually have in my pack, though on a big day I'll throw in some bars, too, to add calories without taking up too much space.

I had to google 'trial mix' they don't sell that stuff here.... But yeah, that would work. I just wanted to see if I could make a Cliff bar that tasted better. I like makin stuff.

I got quickly tired of eating crap, so I went with : - Dried apricots - Stewed Apple most of the time for when I'm on the go. If I really need it, I also get condensed milk (which could be called condensed sugar)
I also got 2 small thermos recipients (1 for food, 1 for beverage) - so I can also have a normal lunch in the backcountry and not a crappy frozen sandwich or hard to digest biscuits.
I look weird in the BC eating rice or pasta with chopsticks but I do feel much better with at least a real lunch in the middle of the day...

You live where there's no trail mix? I figured that was a universal food, dating back to cavemen when they were gathering nuts and berries and chocolates.

My internal furnace burns pretty hot, so I need a good bit of protein and fat to keep my tummy from rumbling constantly. Some of my favorite stuff:
-smoked salmon, cream cheese, and King's Hawaiian sweet bread -bagel with peanut butter -whole wheat rolls with salami and cheese -smoked turkey and sharp cheddar rolled up with some honey mustard -a hunk of my homemade roasted garlic rosemary bread and some good cheese -my oatmeal banana peanut butter chocolate chip cookies
Probably not a coincidence that every one of those has either peanut butter or cheese in them.

I find I can't eat too much while touring heavily, so most often I don't bring a full meal for lunch. I've opted a lot for dried apricots and almonds (don't follow me in the skintrack). 2/3 apricots and a handful of almonds in between runs.
I've never been a fan of any of the bars (Clif, Pro, whatever) and the thought of the shot bloks and whatever is kinda weird (I like real food).
Also, it sounds like your joking about your cans of chicken, however, one food that I've found to work quite well is the pouches of tuna. Packed with protein, deliciously salty, and the pouch doesn't take up much space afterwards (or before).
