I have the Nirvana Pro 35L, and despite having seen the 25L on the Mammut website, I have never seen one in a store (either in person or online). I'm actually looking to sell mine, dolphin color, great condition. Send me a PM if you're interested, and I'll send you some pictures. I am only selling this pack because I will be getting an airbag pack next year, which will most likely be a Mammut RAS because I love this pack so much.
Also, if you are looking to buy new and have both options, I would go for the 35L, as it will have room for all of that for sure. Not sure if the 25L would fit it all. At least not the way I pack.

Yeah go with 35L for sure! I assume you might want to add boot crampons to your list sooner or later!? Or at least in my opinion that's what you should be using if you have an ice axe. Or do you mostly use your axe for riding?

I've been touring w/ the Nirvana Ride 30 pack this season. It's a little cheaper than the Pro model and I've been very satisfied with it for short to extended day trips. Carry's solid board vertically, and ski mode A frame very comfortably. Fits all the items you listed above including helmet & boot crampons.
Dude the 30 or 35 is what you need. I can carry a complete camp and mountaineering gear to base camps, and drop of camp and scurry on with the essentials no prob. It's the way to go. Alpine packs are easily compressed, but nearly impossible to gain space with.
