Hey, I'm learning all about splitboards. I just saw a video explaining the mountain of a regular snowboard binding. Do people split with soft boots? How does that work skinning up?

Most folks split in soft boots. The hard booters are in the minority, but tend to be ardent converts. I rode hard boots for a few months last winter and went back to soft. Both are viable options but it comes down to personal preference. If you currently ride soft boots on your solid board, start with that on your split. Climbing is great in soft boots. I even preferred it over the hard boots since the toe pivot point is farther back. Heel risers take the strain off your calves, and the whole binding can pivot at the toe like an XC ski binding.

Well that is great news cuz every video I've seen so far only had hard boots. I'll try to find more footage of folks skinning up in soft boots. So technically all I would need for a splitboard if I already own board/boots/binding is to get the split kit?

the splitboard 101 section of this site has plenty of excellent information about the basics of the splitboard set up. If you haven't checked it out yet, it's worth a look.
